                  Carlos chegastes na FURG em 1994 e de lá para cá, fostes cativando várias e várias pessoas, com o teu jeito, simples, cordial, simpático, carinhoso e brincalhão...
                  Tínhamos, junto a nós, um novo e especial amigo do Peru.
                  O Departamento de Química passou a contar com a presença de um colega, que encantava aos que se achegavam pelos seus sonhos, ideais, luta e simplicidade.
                  Carlos Rotaryano, Cidadão Riograndino, Professor e Pesquisador da FURG, Diretor da Escola de Química e Alimentos, um grande homem que nos fez companhia e que nos deixou um grande legado.
                  Hoje fomos surpreendidos com a notícia da tua partida, ficamos tristes, pensativos, saudosos, mas também nos confortamos por saber que fizestes um grande trabalho e por sabermos que estarás no Reino dos Céus, que sejas bem recebido na tua nova morada.

                  Graduate Program in Food Engineering and Science

                       The Graduate Program in Food Engineering and Science of the Federal University of Rio Grande (FURG) began graduate activities in1996, as a non-degree program, based on a consolidated background of professors graduated in Food Engineering, who went through training in order to meet the main demands of the food area. The Program is linked to the Chemistry and Food School, a department that, besides complying with different programs, is directly responsible for the training courses of the undergraduate programs in Food Engineering, Chemical Engineering, Biochemical Engineering, Agro-industrial Engineering (Food Industries), Agro-industrial and Agrochemical Engineering, and Chemistry (Bachelor’s and Teaching Degrees).

                        The undergraduate program in Food Engineering started in 1979 through the ordinance No. 810, published by the National Gazette, on October 18, 1985. Afterwards, the program was approved by the Federal Council of Education, which reflected the potential of the former Chemistry Department, nowadays Chemistry and Food School, to have professionals working in the area of Food Engineering. At the time, 4 professors with Master’s Degree and 2 other professionals, recently hired, worked in the field. From 1980 on, faculty prioritized the continuous education in Sciences, Technology and Food Engineering, aiming at the implementation of a graduate program, which happened in 1996 with a start number of 6 doctoral professors, evolving to the current total of 12 full professors and 2 collaborators professors.

                       The strategy to consolidate the continuous education was by scientific initiation (1985), with the Special Program of Tutorial Training – PET (1991) and the creation of the Specialization in Food Engineering, a non-degree graduate program (1994). From such experience, the team proposed the establishment of the first Committee for Graduate Program in Food Engineering, composed of professors from the Departments of Chemistry, Mathematics, Physics, and Behavioral Sciences that proposed the transformation of the non-degree into a graduate degree program, which was approved by the University Council in 1995.

                       The Master’s Degree in Food Engineering started its activities by offering regular courses in the first academic semester of 1996. The renaming of the Program to Master’s Degree in Food Engineering and Sciences and the alteration of 3 areas of concentration to only one occurred in 2001, and in April of 2002 became effective, according to the recommendation of consultants indicated by the Coordination of Improvement of Higher Education Personnel (CAPES). With such experience in progress and the contribution of newly trained professors, in March 2004, the Program extension to the Doctoral degree was approved by CAPES, with emphasis on Food Engineering and Science. Nowadays, the Program has 3 lines of research, which represent the faculty’s working areas: Food Bioprocessing, Characterization of Agriculture and Livestock Recourses, and Valuation of Hydrobiological Resources.

                  Lucielen Oliveira dos Santos

                  Degree in Food Engineering from the Federal University of Rio Grande Foundation (2001), Masters and PhD in Food Engineering from the State University of Campinas and post doctorate at the Faculty of Chemical Engineering of UNICAMP. The professor has experience in Food Science and Technology, with emphasis in the area of Biochemical Engineering: application of magnetic fields in fermentative processes and solid state fermentation. He is currently Associate Professor IV at the Federal University of Rio Grande.

                  History

                         The Graduate Program in Food Engineering and Science of the Federal University of Rio Grande (FURG) began graduate activities in1996, as a non-degree program, based on a consolidated background of professors graduated in Food Engineering, who went through training in order to meet the main demands of the food area. The Program is linked to the Chemistry and Food School, a department that, besides complying with different programs, is directly responsible for the training courses of the undergraduate programs in Food Engineering, Chemical Engineering, Biochemical Engineering, Agro-industrial Engineering (Food Industries), Agro-industrial and Agrochemical Engineering, and Chemistry (Bachelor’s and Teaching Degrees).

                            The undergraduate program in Food Engineering started in 1979 through the ordinance No. 810, published by the National Gazette, on October 18, 1985. Afterwards, the program was approved by the Federal Council of Education, which reflected the potential of the former Chemistry Department, nowadays Chemistry and Food School, to have professionals working in the area of Food Engineering. At the time, 4 professors with Master’s Degree and 2 other professionals, recently hired, worked in the field. From 1980 on, faculty prioritized the continuous education in Sciences, Technology and Food Engineering, aiming at the implementation of a graduate program, which happened in 1996 with a start number of 6 Ph.D. professors, evolving to the current total of 13 full professors.

                              The strategy to consolidate the continuous education was by scientific initiation (1985), with the Special Program of Tutorial Training – PET (1991) and the creation of the Specialization in Food Engineering, a non-degree graduate program (1994). From such experience, the team proposed the establishment of the first Committee for Graduate Program in Food Engineering, composed by professors from the Departments of Chemistry, Mathematics, Physics, and Behavioral Sciences, who proposed the transformation of the non-degree into a graduate degree program, which was approved by the University Council in 1995.

                              The Master’s Degree in Food Engineering started its activities by offering regular courses in the first academic semester of 1996. The renaming of the Program to Master’s Degree in Food Engineering and Sciences and the alteration of 3 areas of concentration to only one occurred in 2001 and became effective in April of 2002, according to the recommendation of consultants indicated by the Coordination of Improvement of Higher Education Personnel (CAPES). With such experience in progress and the contribution of new trained professors, in March 2004 the Program extension to the Doctoral degree was approved by CAPES, with emphasis on Food Engineering and Sciences. Nowadays, the Program has 3 lines of research, which represent the faculty’s working areas: Food Bioprocessing, Characterization of Agriculture and LivestockRecourses, and Valuation of Hydrobiological Resources

                    He is a Professor at the Federal University of Rio Grande, working at the undergraduate course (Chemical Engineering and Food Engineering) and postgraduate course (Postgraduate Program in Food Engineering and Science and Postgraduate Program in Chemical Engineering).                   Curricular Structure

                         The academic semester starts with the period for student enrollment, similar to the University Academic Calendar. The student shall request to enroll in courses as recommended by the program coordinator, together with the advisor. The courses put together topics, which characterize the area of concentration of Food Engineering and Science. Every course has a duration of one semester, consisting of 15 consecutive weeks. The Special Topics course in Food Engineering and Science can be offered during academic semesters or in special periods, regarding the accomplishment of the regimental study hours.

                         To obtain the Master’s Degree in Food Engineering and Science, students must complete 24 credits for the master’s thesis and 24 credits from courses taken. In addition, the student should do an English proficiency test, be approved in the qualifying examination and in the thesis defense, and submit a paper to a journal indexed to Food Science Qualis. The qualifying examination must be performed up to April of the second year.

                          To obtain the Doctoral Degree in Food Engineering and Science, students must complete 48 credits for the doctoral thesis and 36 credits from courses taken, as well as have English proficiency test. Besides, the students should be approved in the qualifying examination and in the thesis defense, as well as submitting or publishing a paper in a journal indexed to Food Science Qualis. The student must perform the qualifying examination up to the fifth academic semester.

                          Before developing their research project, students must attend Graduate Seminar courses aimed at enabling them to prepare a project in one of the Program’s lines of research. The Seminars are responsible for the Coordinator and/or the Assistant Coordinator. The project is presented to a Program’s board of professors. Afterward, the student performs the Qualifying Examination, where must consider the changes recommended by the said board. Then, the project must be submitted once again for approval by a doctoral professor, who will make the assessment.

                           After completing their master’s thesis, together with their respective advisors, students must start the public defense process. The necessary credits to obtain the title must be reached within 24 months, and an extra time of 6 months can be requested to Program by a reasoned process. The examination board is constituted by up to 4 doctoral professors, whereas at least 3 members must have a proven background in the area, and one has to be from outside FURG.

                          After completing their doctoral dissertations, together with their respective advisors, students must start the public defense process. The necessary credits to obtain the title must be reached within 25 months, and an extra time of 6 months can be requested for Program by a reasoned process. The examination board is constituted by up to 7 doctoral professors with a proven background in the area, totaling at least 4 members, whereas one has to be from outside FURG.

                  Introduction

                  Program History

                  The Graduate Program in Food Engineering and Science of the Federal University of Rio Grande (FURG) began graduate activities in1996, as a non-degree program, based on a consolidated background of professors graduated in Food Engineering, who went through training in order to meet the main demands of the food area. The Program is linked to the Chemistry and Food School, a department that, besides complying with different programs, is directly responsible for the training courses of the undergraduate programs in Food Engineering, Chemical Engineering, Biochemical Engineering, Agro-industrial Engineering (Food Industries), Agro-industrial and Agrochemical Engineering, and Chemistry (Bachelor’s and Teaching Degrees).

                  The undergraduate program in Food Engineering started in 1979 through the ordinance No. 810, published by the National Gazette, on October 18, 1985. Afterwards, the program was approved by the Federal Council of Education, which reflected the potential of the former Chemistry Department, nowadays Chemistry and Food School, to have professionals working in the area of Food Engineering. At the time, 4 professors with Master’s Degree and 2 other professionals, recently hired, worked in the field. From 1980 on, faculty prioritized the continuous education in Sciences, Technology and Food Engineering, aiming at the implementation of a graduate program, which happened in 1996 with a start number of 6 Ph.D. professors, evolving to the current total of 13 full professors.

                  The strategy to consolidate the continuous education was by scientific initiation (1985), with the Special Program of Tutorial Training – PET (1991) and the creation of the Specialization in Food Engineering, a non-degree graduate program (1994). From such experience, the team proposed the establishment of the first Committee for Graduate Program in Food Engineering, composed by professors from the Departments of Chemistry, Mathematics, Physics, and Behavioral Sciences, who proposed the transformation of the non-degree into a graduate degree program, which was approved by the University Council in 1995.

                  The Master’s Degree in Food Engineering started its activities by offering regular courses in the first academic semester of 1996. The renaming of the Program to Master’s Degree in Food Engineering and Sciences and the alteration of 3 areas of concentration to only one occurred in 2001 and became effective in April of 2002, according to the recommendation of consultants indicated by the Coordination of Improvement of Higher Education Personnel (CAPES). With such experience in progress and the contribution of new trained professors, in March 2004 the Program extension to the Doctoral degree was approved by CAPES, with emphasis on Food Engineering and Sciences. Nowadays, the Program has 3 lines of research, which represent the faculty’s working areas: Food Bioprocessing, Characterization of Agriculture and LivestockRecourses, and Valuation of Hydrobiological Resources
